Rated 5 out of 5 by from This was VERY easy and quick to make! This was VERY easy and quick to make! I used Rotel diced tomatoes w/ chiles instead of the salsa and a dash of cumin! It is a keeper and IF there are any leftovers, it is fantastic warmed up! It is now in my dinner rotation!

I used half a box (8 ounces) of whole wheat macaroni and 2 cups water to make more servings. Next time I might add some chopped green pepper, cumin, salt and pepper because it seemed a little bland.
