  • Cook rice as directed on package, omitting salt.
  • Meanwhile, cook chops in large nonstick skillet on high heat 2 min. or until bottoms of chops are browned; turn. Sprinkle with oregano; top with peppers, dressing and tomatoes. Bring to boil on medium heat; simmer on low heat 10 min. or until chops are done (145ºF).
  • Remove chops from skillet, reserving vegetable mixture in skillet. Cover chops to keep warm. Cook vegetable mixture on high heat 1 to 2 min. or until peppers are crisp-tender and sauce is thickened, stirring frequently.
  • Spoon rice onto serving plates; top with chops, vegetable mixture and cheese.

Substitute

Serve over hot cooked long-grain brown rice instead of the instant brown rice.

Purchasing & Storing Bell Peppers

Look for brightly colored peppers with a firm thick flesh. Bell peppers, also called sweet peppers, should not be soft, dull in color or have spots. Red, purple and yellow bell peppers are green originally, but change color as they mature. Store unwashed peppers in the refrigerator in a perforated plastic bag, or loosely wrapped in a plastic bag for about 1 week.

My husband is not a tomatoe person and I made more since I was having some people over for dinner, so I did 2 batches, one with tomatoes and one without and the one with the tomatoes tasted better. It added great flavour but didn't overwhelm, so next time my husband will have the tomatoes! The italian dressing gave such good flavour and I mixed the veggies in with the rice when eating to give the rice flavour and it tasted great. Will defnintely make again, and I normally don't make pork chops because they never turn out, but with this recipe they sure did! I made exactly as stated in the recipe but added onions and some seasoned pepper.

The first night I fixed this meal, my son and dauthter-in-law both raved over how great it was! We also tried this recipe using chicken breast and subtituting Mexican style tomatoes for the Italian style tomatoes. And we also substituted steak for the pork chops. Both were also excellent. This recipe is definitely one that we will make over and over again because it is so quick and delicious.

Rated 4 out of 5 by from Great tasting. Great tasting. My daughter actually made this for us (she doesn't cook too often) and we all liked it very much. I would not too much recommend the brown rice as it is very tasteless by itself and you really must mix it in with the vegetables and sauce to get it down. The Chops were very good, however.

My picky 8yr old scraped the sauce off the meat, but then mixed it with the rice, and finished all of it! Very filling, husband (also picky)happy with this one. Will make it again.

Instead of diced tomatoes, I used Progressive's chunky tomato soup, which is yummy enough to use as spaghetti sauce (a little on the sweet side), and it was perfect. I don't know if the brand matters, but this soup was so good and MADE for this recipe.

But tonight I took a chance and was told over and over how good it was. This will definately be made again. (BTW, I still had to clean up but that was okay.)

My husband is a very picky eater and likes the basic meat and potatoes meal, so I was really surprised that he liked this. I will most definitely make this again for my husband and kids.
