To get exact level cup measures of dry ingredients, such as sugar, spoon sugar into dry metal or plastic measuring cup, then level by scraping excess sugar from top of cup with a straight-edged knife or metal spatula.
Prepare as directed, adding 1/4 cup finely chopped maraschino cherries to the prepared peaches before mixing with the sugar and lemon juice.

This is very very good.
Even tho it was a 30 minute or less recipe, the jam turned out to be syrup. The up side, I won't have to buy pancake syrup for awhile. I used the lower sugar pectin for my peach jam and am not happy with taste or texture.
If you think this jam is too sweet, don't reduce the sugar quantity -- jam recipes are very particular! Instead look up the 'SURE.JELL¨ for Lower Sugar Recipes - Peach Freezer Jam' at this website. I tried the lower sugar pectin for my strawberry freezer jam this year and prefer that now. More fruit flavor and less sweet.
