What we did with this one was prepped the spinach and mushrooms, made a roast chicken, and fried up fresh bacon. We stored a each ingredient in their own container in the refrigerator. When it was time to eat, we topped each salad just before eating. This recipe lasted us a week for two people. The prep once method is a winner in our house. For our hot summer weather lately, it's a fast, cool, refreshing dinner.

Instead of using the designated dressing, I cooked a couple strips of bacon & I used a little bacon grease in the pan, added the juice from the can of the oranges, some balsamic vinegar & sugar and cooked it until it was thick & bubbly and poured it over the salad. My husband even commented that he really like it! It was excellent!

Rated 4 out of 5 by from What a treat! What a treat! I'm so tired the the same old salad. I served it as a side dish to the Bruchetta 'n' Cheese Stuffed Chicken Breasts in that issue. It went very well. I omited the chicken and used the Roasted Red Pepper Italian dressing so the flavor would echo the main dish.

Well my whole family doesnt like spinach so a nice nutritious change is romaine lettuce and it even tastes great without the mushrooms as well. This is a great tasting salad and it tastes great with strawberry vinagriete(dont know how to spell) dressing

I made this recipe for a TOPS luncheon adding Strawberries for additional color and flavor and using Kraft Light Done Right Red Wine Vinaigrette. Everyone loved it. It was quick, easy and delicious!
