  • Place shrimp and peas in colander; rinse under hot water until thawed. Drain well. Place in large bowl; set aside.
  • Arrange lettuce on 4 plates to resemble cups.
  • Add onions and dressing to shrimp mixture; toss lightly. Spoon into lettuce "cups."

I used the salad shrimp instead of the large shrimp and served the salad in a pretty crystal bowl, not individually, at a Christmas luncheon. I lined the bowl with lettuce and also sprinkled paprika over the top of the salad. It was very attractive looking, especially with the lettuce showing at the top of the bowl, and had a lot of compliments on it.
