This is a quick and easy recipe! Great to have when you are on a diet and in a hurry! I also added fresh chopped tomatoes, which gives the frittata more of a juicy flavor.
I just made this for breakfast for myself. I cut the recipe in half and used chopped fresh spinach instead of green pepper as it's what I had on hand. The flavor was wonderful and it was super easy. I will definitely be making this often!
