Rated 1 out of 5 by from I was pretty disappointed. I was pretty disappointed. I really think frittata's do best in the oven. My green peppers seemed to move towards the middle of the pie plate as it cooked. The edges were done much faster than the middle, so I had to leave it cooking longer than the recipe called for. Then the edges were way overdone, chewy, & dry. I had to cut the edges off and put the plate back in to finish cooking the middle. I won't attempt a microwave version again.

We made this in our summer school class, just for fun, and teach them how to measure, and it was VERY delicious. The children really enjoyed it. We added a few other things like salt and pepper, and we also added a little ham, and onion, and put picante sauce on top of it. I am going to make one for breakfast for my family tomorrow morning!!! YUMMY!!!

I prefer to make this recipe on the stove top in an 8 to 10 inch low pay sprayed with non stick, butter flavored, plus one half t of olive oil. Cook on medium heat till well set. Lift and tilt to cook any uncooked on top. Split down middle and turn if nicely browned on bottom. Slid out on heated plate and top with well cooked and crispy bacon. Good!!

The frittata is incredibly easy to make and very flavorful! Its a recipe that can have a lot or variation such as a little bit of ham or maybe even some jalapeno peppers for the real adventurous type. Its a keeper in our house!

I cut the recipe in half and used chopped fresh spinach instead of green pepper as it's what I had on hand. The flavor was wonderful and it was super easy. I will definitely be making this often!

I found that I had to cook mine a couple minutes longer, but other than that, they were good. I did add ham to my husband's second one because I know he'd rather have meat in his frittatas and omlettes.
