I added more lemon zest and lemon juice. I also used crushed graham crackers instead of Nilla wafers for the crust which I only baked for 7 minutes so it was softer. This recipe is so much easier than my other traditional recipe, and the Neufchatel cheese makes them sooo creamy!

These were a big hit! They are nice and creamy. I used graham crackers instead of the vanilla wafers for a crust, since vanilla wafers are very sweet. They disappeared fast. I only baked the crust for 5 min. as stated at the bottom of the recipe for a softer crust.

I made these for a graduation party over the past weekend, everyone got mad at me because they say its impossible to eat just one. I'll most certainly be making these for the Memorial Day cook out... not that I have a choice seeings my friends from the grad party will be there as well.

These were delicious! Unfortunately I couldn't find any neufchatel cheese, so I just used light cream cheese and they turned out great! I love that these aren't overly sweet or overly creamy, just perfect.
