This was a very easy recipe that looks impressive, and tastes light and "summer-y". A great cake for a small gathering or a fancy dinner for two at home. The taste is similar to a gelatin poke cake, but it's still light and refreshing. I made it with lite sour cream and lite cool whip. Tasted great still and cut a few calories :)

One Word...BEAUTIFUL!!! The 1st time I made this cake was Mother's Day 2007. My younger Sister and I ALWAYS go BIG and ALL OUT for our Mom on her Day. From Breakfast in Bed that Morning...to Continued Suprises All Day Long!! That evening my Sister cooked a Pasta Dinner and I Baked Dessert. When I saw this recipe I knew I had to make it and Mother's Day gave me the Perfect 'Excuse'. When all was said & done...Our Mother was in Tears. She was Speechless!! She took pictures of the Finished Product and Delighted in the Taste!! It is now on her List for Dessert on her Birthday...which by the way is Feb. 14th!!

Great cake and yummy frosting! Only problem was the jello side of the cake stuck to the bottom of pan and almost broke down the middle taking it out. If I make it again I will put the white in first then the red on top before swirling rather than side by side.

This is one of the best refreshing summertime cakes! The icing with the strawberries is to die for. I made this cake for a company birthday party, and it is now my number one requested cake for other parties.

My husband, who never cooks (and cannot cook), made this cake for a men's bake-off contest. He won!!! It was wonderfully moist and super light. A+ recipe that even my husband can cook!

I made this cake previously, and it was delicious! I need help before the July 4th holidays--I made the cake today and need to take it on about a 2-hour trip day after tomorrow. I have it in the refrig in a cakebox. The cakebox will not fit in my cooler that plugs into the car lighter. Can I freeze the cake and let it thaw out on the way to the party? Thank you for any help as soon as possible. In addition to the strawberries on top, I will add some blueberries for the red, white, and blue.
