This is the best ice cream cake! In fact it's the only birthday cake my 8 year old son wants every year. It is delicious and everyone loves it! This year I changed it up and crushed peanut butter oreos in it, and it was so good! You do have to put it together fast because the ice cream sandwiches start melting ( I usually double the recipe) but I put it in the freezer over night and it is perfect the next day :) Try it, you won't be disappointed! :)

I made this with vanilla and mint ice cream bars for my granddaughter's graduation party. It was absolutely delicious! I will definitely make it again. Maybe I'll try chocolate and mint next time. Yum!

With all the rave reviews, I was really disappointed. I was really excited to make this, but in the end, everyone found the fudge layer too thick & rich and not enough ice cream to offset it. Even my 4 year old just picked through it and left most of it on her plate. I won't make this again, but I may use the recipe for that fudge later. That stuff would be great on a normal layer cake used more sparingly.

I just prepared this for a bbq and it was melting so much that I had to put it in the freezer and hopefully, put the cool whip on before the bbq. Did anyone else have this problem?

I made this for a bbq/pool party and it was a huge hit. I like mint so instead of using the regular oreos I used the ones with mint. That was the first thing everyone picked out of the taste and absolutely loved it! And the green flecks in the layers looked pretty too. I'm looking forward to trying this with the peanut butter oreos also.

I like to consider myself a dessert connoisseur but sometimes it's really nice to whip out an amazing treat in a short amount of time and without spending a fortune on the ingredients. I did add a layer of Coffee ice cream between each of the cookie and pudding layers which worked well. It was a crowd pleaser and took home first prize at our office dessert competition...20 desserts total.
