I made this recipe last night for dinner, and my whole family loved it! My dad even said that it was better than the enchiladas at our local Tex-Mex restaurant! :) This is definitely going in my recipe book.

I made this just as the recipe called for and it turned out great! It also made a pretty good amount. I have a family of four and there is plenty for leftovers for lunch tomorrow.

Was very good, first time had to do just do the recipe. Second time added just a few extras, like corn and some more beans. Seasoned it just a lil more. But the basic recipe was pretty good. Only had to adjust for our family, seasons and filling.

I loved this recipe and the kids did, too! I added black olives to the meat mixture. Also mixed salsa in with the sour cream! Very tasty, quick and easy! Thanks!

Have made this several times and always a hit with the family. I use exact ingredients except I sub the black beans with pinto beans and always comes out real good and filling.
