I made this recipe with 4 large chicken breast halves rather than 6 small and used roasted vegetable ritz crackers. It was pretty good and fairly easy, but a bit bland. Next time I'll season the cracker crumbs with some herbs and garlic-- it has good potential.
Fantastic Recipe! This dish is EASY,delicious and yet elegant enough to be served for entertaining, I went the healthy route and used the lower fat neufchatel & 2% mozzarella cheeses. I also added a crank or two of fresh ground pepper, a sprinkle of onion & garlic powder to the spinach mixture. Wonderful!
These were awesome. But make sure you drain the spinach all the way!
I can't believe I was able to make this restaurant quality dish. It is so good and a nice break from standard Italian dishes. I do use more of the egg and cheese filling and cracker coating than stated, but everything else is the same. I make this all of the time and my family loves it.
Great and easy recipie, I Made some with marinara and some with alfredo, so good ! I did add a bit of pepper to the cracker and cheese mixture. Will definitly make again !
My family loved this:-) The only thing that I did differently was I added minced garlic in the cream cheese mixture. Not much, just enough to give it a little more flavor. My husband said he wouldn't change a thing & my 13 year old was willing to fight anyone over the last one:-)
Took awhile to make my first time, but well worth it! Excellent recipe! I made it with a garlic Alfredo sauce instead of Spaghetti sauce.
The reciept was easy to follow tasted great and looked beautiful, I plan on making this for my daughters wedding in March. The only change I would make would be to season the chicken with salt & pepper or a good seasoning salt before putting the filling in.
I have made this recipe several times and it is very good. Everyone loves it and it is easy to make. This last time, I made the healthier substitutes: neufchatel cheese and reduced fat crackers. I couldn't even tell the difference. This is one of my favorite recipes!
