I made these to give as Christmas gifts to my daughters' teachers and my co-workers. Everyone has raved over them. I made the cream cheese and chocolate mixture and refrigerated for over 24 hours, so they were really cold when it was time to roll into balls. I then put the balls back into the frig until the next day when I dipped them into the chocolate. I was nervous that it was going to be hard and really messy but I did not have any of the problems the other posters had. I'm guess because the there so cold. I will definitely make these again.

I made this recipe for Christmas 2009. I did a trial run since I was giving them as gifts. I found out a few things that may be helpful to others. *When making the balls, use cocoa powder on your hands to keep the chocolate from sticking to your hands. *If the chocolate gets too soft, put it back in the refrigerator. *After making the balls, put back in the refrigerator before dipping. *Melt the chocolate for dipping and let sit for a little while so that it cools down. This keeps the balls from melting. *If rolling the balls in coconut or something else, make sure to roll them right away. *My craft store sells chocolate dipping tools. I found them helpful and did not use a fork to dip the balls. Hopefully my tips help since these instructions are a little vague.

These are great, but took a lot more time than I expected. I had to keep putting the bowl back in the refrigerator so the mixture would stay cold enough to handle. In other words, it became too soft to roll when it was a little warm. You should tell about this in the instructions. I would separate the mixture into four parts so you could leave it in the refrigerator in separate bowls. Everyone loved them.

These are great desserts, easy to make with minimal mess. My daughter and I love making them and get really created with decorating - crushed peppermint, cinnamon sugar, colored sugars, powdered sugar, etc. I would recommend these to anyone!

These were such a big hit at my bunko a few weeks ago. They re so delicious and super esy to make i am going to make them again for my family's Christmas day dinner.

These were not my favorite, but my husband really liked them, I might try using a different chocolate next time.

These are really yummy and easy (although messy) to make. For the person who was asking if they taste like cream cheese, i don't think they do at all. I just taste yummy chocolate!

I made this recipe with my three kids and niece and nephew. We divided the ganash into three parts and added peppermint, raspberry, and vanilla extract to it. We decorated them with white chocolate, semi-sweet chocolate, and cocoa powder. We had so much fun making theese treats, while a bit messy, the cleanup was delicious. The treats were a hit at the dinner party, I only wish I had made more. I will be making these to give as gifts at christmas time.
