This dish is currently on low on my stovetop, letting the flavors meld a little more, and already is one of my favorites! The only change I made was in the sauce. I only had half a jar of salsa (a good black bean/corn one), but I was also in the mood to try making my own enchilada sauce for another recipe. I used the half jar of salsa, and I used the enchilada sauce for the rest of it. Really good flavor, and super easy especially if you're just using a jar of salsa!
