This cake is wonderful. I did add half tablespoon extra of sugar and used an entire package of coconut for icing. Refrig. icing before spreading and cover edges of cake to prevent burning the last half hour.

I made this cake for our Christmas Day Dinner. It is delicious! A couple of things I would change. It is really better cold so I would make it a day ahead to give the icing and cake time to chill. I did have a small piece on top that stuck to the bowl but I managed to piece it back on which worked fine. I will be making this again for sure!

I made this recipe for a New Years gathering with friends and all our kids. I used a Bundt pan and added vanilla extract to the cream cheese batter for some extra flavor. It turned out perfectly and was a big hit! I will definitely make this on another occasion; maybe play with different flavor combinations.

I made "snowball cake" for our Christmas Day dessert. I thought that it turned out okay and everyone eating the dessert thought that it was yummy. The only problem I had was the pudding dripping down the sides of the cake a bit, making the cake look a bit messy. I would make this cake again.

I love this recipe! I did read several reviews before I decided to make this, so I made a few changes. I didn't have a large bowl to use that could be placed in the oven, so I tried using a bundt cake pan as another user did. I only baked it for 50 minutes and it came out perfectly. I also saw that some users added more sugar to the cream cheese mixture. I opted to add about 5 or 6 packets of splenda. A few spots turned out looking marbled, but for the most part the cream cheese came to be right dab in the middle of the cake. Looked beautiful when sliced, and tasted fabulous!

Great recipe and it looks fab! It definately takes more coconut than on recipe. Don't use fat free cream cheese!!! I made it twice - once with regular cream cheese, which was fabulous, and one with fat free, which made it taste odd!
