What You Need

1-1/2

Tbsp. butter

1/4

cup dry JELL-O Lemon Flavor Gelatin (1/2 of 3-oz. pkg.)

cups JET-PUFFED Miniature Marshmallows

cups crisp rice cereal

pkg. (3.4 oz.) JELL-O Lemon Flavor Instant Pudding

1-1/2

cups cold milk

fresh strawberries, cut in half

Make It

MICROWAVE butter in large microwaveable bowl on HIGH 30 sec. or until melted. Add dry gelatin mix and marshmallows; toss to coat. Microwave 1 min. or until marshmallows are completely melted and mixture is blended, stirring after 45 sec. Add cereal; mix well.

PRESS cereal mixture onto bottom and up side of 9-inch pie plate sprayed with cooking spray.

BEAT pudding mix and milk with whisk 2 min.; pour into crust. Refrigerate 2 hours or until firm. Garnish with strawberries.

Prepare using JELL-O Vanilla Flavor Instant Pudding and your favorite flavor of JELL-O Gelatin.

Substitute

Substitute fresh raspberries for the halved strawberries.

How to Use Remaining JELL-O Gelatin Mix

Add 1/4 cup boiling water to remaining dry gelatin mix in small bowl; stir 2 min. until dissolved. Stir in 2 Tbsp. cold water. Refrigerate 1 hour until firm.

Ok, first I would like to say I have not tasted it yet but it does look good after i figured out how to get the rice crispy's spreaded in the pie pan, do not use the bottom of a measuring cup I had to spray my fingers with cooking spray and press the cereal down and around the pie pan. it says 15 mins prep but it is a little longer. I will try it again and tweek it until I get it right.

Extremely simple to make. Great lemony flavor, not too sweet, not overpowering. Would recommend using a glass or ceramic pie dish rather than something coated that a sharp knife will scratch, because it can be a challenge cutting through the crust. With an abundant fresh fruit topping, I think the filling amount is fine; however, if a single slice of fruit is just a garnish/decoration, then I would agree perhaps more filling would work better. My mother put whipped cream on top of her serving and it was terrific! What a great recipe!

Very easy to make and very pretty with the raspberries on top. However, I ended up using 2 boxes of pudding as one didn't seem to fill the crust enough.

The "crust" was tasty on it's own, as was the pudding filling but they didn't go well together. The rice krispie treat is too chewy for the smooth pudding. I made it with GF Rice Krispies and should have reduced the marshmallow but the lemon jello was a great addition!

Very unique recipe. Very quick and easy. Lemon is not overpowering like it sometimes is. Light and refreshing.
