For our money, Cinderella had it wrong. We'll take the pumpkin, not the prince. This delicately layered, sweet and creamy pie is case in point.

I use a 9oz pie crust instead of 6oz more room. Sometimes I'll use french vanilla pudding and also just 4oz of cream cheese. Been making this for years. The light version is just as good as the full flavor one

I have made this for the past 2 Thanksgivings and last year I actually had to make two one for our house and one to take to my inlaws. I will definatly be making it this year because my husbands LOVES this pie and he tells everyone about it. If you are having trouble with the pie setting make sure you are using canned pumpkin not canned pumpkin pie. The first year I made this I accidently got the pumpkin pie and it wouldnt set. When I looked closer I realized my mistake bought the canned pumpkin and it set perfectly!

I had seen this recipe several times and had wanted to make it. So I made it over the weekend and while it set up beautifully and looked pretty. The taste was just okay. I like squash, so I thought it was okay, but the rest of the family did not like it at all. The pumpkin part was like eating baby food squash. Could never take the place of real pumpkin pie. Would not make again.

It was delicious. We used a electric mixer and it didn't set up as nice.

I made this version of pumpkin pie for Thanksgiving 2008 and it was a HUGE success. It was a nice change of pace from traditional pumpkin pie and with tons of flavor! I'm making it again this year, I loved it so much! Thanks!
