Everyone enjoyed this. Phyllo was hard to work with, especially using cooking spray instead of butter to save calories. Next time I will make the filling and purchase the phyllo "cups" instead of trying to fight the dough.
I used Parmesan cheese instead of the Feta cheese. They turned out really well!
I've worked with phyllo dough many times before so I didn't have problems using it when making this recipe. It also takes much less time to make a roll rather than triangles. The cream cheese made for an interesting addition to the filling. Overall, an easy and tasty recipe.
This recipe was the hit of my recent party. Easy to make (freeze until you are ready to bake them), tasty and pleasing to the eye.
This was a beautiful presentation. The roll-ups were not as flavorful as I would have liked them to be. Maybe a stronger flavor cream cheese will be used next time, or fresh herbs. The phyllo takes practice. But it is an easy side to take to a party. Wrap the logs in plastic wrap and slice and bake when you arrive. I used lots of butter on my phyllo, it helped with the malability of the dough.
These were a huge hit at a holiday party where everyone brought a dish. Everyone asked who made the spinach rolls. I made the recipe again and froze them for my next get together.
HUGE HIT! It was a welcomed change among our usual " meat and potatoe lovers". It is now on the lists of requests for our next get together. The biggest challenge is the Phyllo. Next time I'll try the cups.
very good and so easy to make! everyone thought i bought these and just heated them up. What a time saver too, i made these a few days before my party and put them in the freezer until i need them. i will definitely make these again!
I would have to say the same thing about the filling being too heavy for 3 sheets of phylo, but also everybody loved it at my company's Christmas Party.
Don't be afraid of Phyllo dough. It really was easy, and everyone loved it. Spanikapitas are harder to make. Next time I will brush the top with a little egg, to give it a more golden brown color. Yummy.
