I have made this recipe twice and it's winner! The cake is supermoist! I tweaked it just a bit by toasting the pecans first. My family, all on diets all the time, had two pieces each.

Very easy. I used walnuts, instead of pecans and also added shredded coconut and golden raisins. Used packaged whipped cream cheese frosting.

Best carrot cake I've ever had. The frosting was ridiculously good. SO moist and yummy!

Even though I do not like carrot cake, this was pretty good & exceptionally moist. Beware, the icing recipe makes enough for 2 cakes!

WOW! Quick and delicious! i love this recipe! I had a 20oz can of pineapple so I added the extra in between the layers of cake after I iced it. YUM!
