Gooey cheese with pasta. What's not to like?

I added fresh, chopped spinach cooked with a clove of garlic in a bit of EVOO. Used low-fat ricotta cheese. I also did NOT cook the shells before filling/baking. As a result, had to turn the shells over half-way through cooking, but they absorbed plenty of liquid from the sauce to soften. Quicker and easier! So YUMMY!

I made this receipe for my family one Sunday afternoon. They loved it! I had to get my husband to help me squeeze the cheese filling into the manicotti shells. It was a little awkward for me handling by myself. Do make it with the Basil Pesto Sauce, it is delicious!

It was a very good dinner, but rather bland. I added herbs de provance, Italian parsley and other spices to jazz it up a bit. It was very easy to make and I would definitely make it again.

This was okay...next time I think I will add some sort of meat. It seemed sort of plain to me without something!

I'm not a good cook at all. My sister has recently had her first baby so I offered to make her dinner, hoping I would do okay. I picked this with the Basil Salad and it was really easy to make and tasted pretty yummy considering I usually burn salads! The Black Forest Mousse Dessert tastes great afterwards, too!

Added ground round and mild Italian sausage to sauce. Small town grocer did not have pesto sauce, so I substituted a bit of a package of creamy pesto sauce mix. Simply delicious, and easy.

I did not use the pesto sauce, so I thought it was a little plain. Very easy way to fill, I used a cake decorating bag instead of a ziploc.
