This recipe was simple and refreshing!! My family absolutely loves it. I didn't quite use the full bag of powdered sugar for the icing and it was the perfect consistency.
I made this recipe for my husband's birthday. He is a real lemon lover. He really enjoyed them, so did the kids! The icing is a little more thin than regular icing, but was still great. I think adding the lemon zest to the icing makes it pop! I will be making this again!

Such a yummy treat! I was worried at first because the mix was very thick (as the recipe stated) but it turned out just fine at the end result and was extremely delightful! I made this for my grandmother’s Birthday what a hit!
These were so delicious, moist and easy! I took them to a dessert party and people raved about them and asked if they could take the extras home. The recipe was so tasty and easy that I have made several variations. I've used chocolate cake mix with chocolate pudding and just plain cream cheese frosting with chocolate shavings on top. I've also used the spice cake mix with cream cheese pudding and the cream cheese frosting and toasted walnuts on top. Just about any combo I could think of and I always get rave review. Then...when I tell people how easy they are they don't believe me.
This turned out great! Instead of cupcakes, I done one huge 9 inch layer and 6 cupcakes. The icing turned out a little runny but I did put it in the fridge for a while and then poured it on the cake and let it run over slightly - it looked like it was suppose too! And I did not use the lemon zest/peel, I took a slice of lemon, cut it in half and put them together and placed on top. It won 2nd place in a baking contest at my work! Everyone just kept saying how moist it was!!! I will make this many more times!
The texture was Like cornbread, and the frosting disappointed me; however kids don't turn down nothing sweet.
I was a little disappointed with the recipe. Adding the Jello-Lemon Flavor pudding actually made my batch of cupcakes have more of a cornbread texture --not soft and fluffy.
Loved this recipe!! Hubby even liked it and he's a picky cake eater! Excellent!
Very light and a great cupcake texture. The lemon taste is a great change from vanilla and chocolate
