First thing I can say is that it had too much spinach and overpowered the cheeses. Otherwise it was good and I will make it again, only I will used less spinach. Filling the manicotti was not too difficult. I actually used a small spoon to fill while I held the bottom part of the noodle. Make sure not to overcook the pasta or it will break and fall apart, becareful. The recipe doesn't say to cover the pasta in the oven, but next time I will, as it dries out the tomato sauce when you don't. Also, when it calls to cook the mushrooms it doesn't say BUT I cooked in a bit of olive oil, that didn't make sense to me. For those few reasons I give it 3 stars. It is very easy to make.

this was so yummy!!! I have never made manicotti before and well.. I will again! my husband and I made these together.. we added a pound of italian sausage and had an interesting time stuffing the shells. Next time I will use a bag with the end cut off. The whole family LOVED it and ate it all!!

We really enjoyed this recipe. I have never made anything like this before. I finely chopped the mushrooms and my picky eaters did't even notice. It was simple and we loved it.

This was just terrific! My family loved it. In order to save time I used the 'express pasta' that you do not have to pre-cook. It cut down on the prep time and came out perfect :-)

Fantastic dish! Especially since I'm a vegetarian, I appreciate dishes that don't contain meat! This is a great main dish. I've never made manicotti before. Love this!

I made the recipe exactly as it says to, but I slightly under cooked the noodles so they would be easier to fill. It turned out amazing! As others have said, I used a plastic bag and cut off the corner to fill them, and I had them filled in no time. I was worried that it was going to take too long, but it was fast.

I made this, but substituted the ricotta with cottage cheese. I added groung beef, a can of diced tomatoes and extra cheese. My husband just reached for seconds and told me this was probably the best thing that I've ever made him. I did have a problem with my manicotti falling apart even using a bag to stuff them. But I used the four that split with the extra filling to make my husband a personal sized lasagna for work tonite! I will be making this again soon!

Awesome and easy, my family loved it. I added slices of eggplant to the bottom of the dish before adding the manicotti.

I don't like spinach or mushrooms so I used green onions and a little bit of red bell pepper instead. This was my first time making manicotti and it was easier than expectedl, but definitely use the ziploc bag with the corner cut to get mixture into the manicotti. Very filling recipe!

My family loved this!! In others reviews they had a problem stuffing the shells, I cut the end of a freezer bag and put my mixture in there, But all my noodles split when boiling? So I could of spooned it in. How do you stop that????
