This was just good. Nothing special. I did add salt and pepper and still thought something was missing.

Made this for brunch & my husband loved it. The only thing I changed was the meat. I had leftover steak so I chopped that up in place of the bacon. It was really good!

I have made this recipe time and time again. I have used cooked, crumbled sausage in place of the bacon, too. This is a great low-carb dish. I'm not real fond of oregano, so just deleted it! Once I cut the omelet into 8 pieces, I place each piece in a Ziplok vacuum qt. sized bag, vacuum out most of the air (don't squish the omelet slice) and freeze. This way I have a quick breakfast just waiting to pop into the microwave for 30 to 60 seconds, after removing from the Ziplok bag, of course.

My daughter and I made this recipe for our family gathering in November. Everyone loved it, even the men who thought they wouldn't! We did need more time to bake it.

LOVE, LOVE, LOVE this recipe. One of my all time favorites. Not necessarily the ingredients listed but the concept of cooking an omelet in the oven. I always keep grated leftover ham in the freezer and make this with the ham and cheese and add whatever else I have on hand. A tip for easier rolling-use the paper to lift it up and roll. Everyone is always impressed with this dish!

Glad I tried this recipe before serving for Mother's Day, it was very bland. Definitely needs some seasoning. Although I didn't have any trouble rolling it up, the melted cheese between the layers caused the roll to separate and flatten. Perhaps the cheese should be added to the egg mixture. Think I'll look for a different recipe to serve.
