YUM. I really liked this one. My fiance wasn't too keen on it, but he doesn't like salsa or anything spicy. I would definitely make this again.

My family and son's friends really liked this and asked me to make more! I added more cheese and salsa to make it alittle more cheesier and tasty.

I added taco seasoning to the meat and used medium salsa because my family likes a little "kick". It was very good. I would make it again. These would be great with chicken, pork, etc...

I had a hard time making Enchiladas from scratch coming from a Mexican family who to me are experts at making enchiladas, so I thought. This is one of the best enchilada meals I have eaten. Very easy to make and very delicious. I would make this meal again.
