I had a hard time making Enchiladas from scratch coming from a Mexican family who to me are experts at making enchiladas, so I thought. This is one of the best enchilada meals I have eaten. Very easy to make and very delicious. I would make this meal again.

This was so good, we used taco seasoning on the meat to give it an extra kick along with Mexican cheese. Served with tortilla chips and queso dip.

my husband and i loved this recipe!!! to make it a little bit healthier, i used whole wheat tortilla shells and ground turkey. it was excellent and we have leftovers for tonight. also, i used the can of rotell.

I substituted corn tortillias instead and added a can of mexican rotell to the meat.... My family loved it!

Just a wonderful quick easy dish that any single guy could make and it makes a great home cooked meal for your date. Go for it Guys. LOL

This recipe was quick, easy and very tasty. I added chopped tomatoes and lettuce on the side along with some refried beans and a dollop of sour cream on top. It felt like I was at my favorite Mexican restaurant!!
