Strawberry Freeze

Strawberry Freeze recipe
Fresh berries in and on whipped, chilled cream cheese would have been enough. But no. We're upping the ante with a chocolate chip cookie crust. Pure heaven.

My wife and I really do like this recipe. I do not usually go in for what I call "assembly" recipes, but this one is an exception. I have made it 4 times. We both think that is tastes like a very high quality ice cream.

This did not turn out spectacular. I liked the idea of using chocolate chip cookies as a crust...maybe this would fare better as a shortcut for another frozen pie idea.

It melted VERY quickly once we got it out to serve. Wasn't as sweet as I thought it would be, kind of tart. I used shortbread cookies instead of choc chip. But, everyone ate it up, so they must have liked it!

I think this would be great with a large home made cookie also. I think it would also be great if you grind or crush the cookies up and make a cust using a bit of butter and prebaking and allowing it to cool before adding cold mixture. It was so yummy everyone loved it made it 2 times already this week.
