This was ok. I thought there was too much spinach and it took away from the stuffing. I also didn't find the chicken itself to have much flavor. I made the chicken stuffed w/ stuffing & broccoli before and we loved that so I think I'll stick to that next time.

I asked my husband if i should make this as part of our meal for Easter he said that would be a great idea since it came out so good and was very easy to make .

This is one of the best chicken dishes I have made. I didn't have any roasted red peppers, so I used sun dried tomatoes. I also just used Kraft Lite Italian dressing because I didn't have the other. It was absolutely delicious.

All I can say is AMAZING!!! I made this for Valentines Day and it was a hit! Not only was it easy, it has veggies in it and you dont taste them! I did double the recipe and i forgot to double the spinach so I guess I only put 1/2 the spinach I should have but the stuffing looked like the stuffing in the picture and it did have enough spinach in it I thought.

Absolutely fabulous. My husband is a food snob and not especially fond of chicken. He loved it. Definately a keeper.
