Quick, easy and good. I make following recipe and without sausage as a meatless meal. I also have served meatless version with grilled chicken breast.

I loved this, but just about doubled everything. Added onion at the end of the sausage cooking, too. I add onion to just about everything.

This is a great dish with a short list of nutritious ingredients and wonderful flavor, and it's served me well over and over! I recently prepared this dish as Sunday dinner to a mom with a new baby. Paired with a salad, bread and a bubbly non-alcoholic cider, it was a complete meal that she and her husband complimented.

I love this recipe! I have made it over and over again. I have done different variations like spicy sausage and rotel tomatoes for extra spice!

I have never commented on a recipe before, but I HAD to register just to let everyone know how good this was!! I was completely amazed at how flavorful (yet simple) it was, and have started adding roasted red peppers (just to mix it up...I made it 3 times in 2 weeks). YUM:)
