Wonderful as is but I added a chicken breast to the slow cooker and then shredded it through out the soup. I also cook the pasta separately to keep it from overcooking. I add the pasta to the minestrone per serving.

I have been making this recipe ever since I first saw the recipe back in Feb. 2010. I make it often - it is our FAVORITE soup! I still normally use the ramen noodles (stir the ramen seasoning in & then add the noodles). We had it today. Wonderful!

I have made this recipe twice now (it's currently cooking at home for tonight!)and it turned out great when I made it the first time! I chop the vegetables the night before so all I have to do is put everything in the crock pot and let it go. The pasta was a bit overcooked the last time I made it so I may shorten the cooking time when I add it tonight. Other than that it was quick, easy, delicous and practically guilt-free!

I have tried several other minestrone recips and this one is the WINNER. I did add zucchine, garlic and italian toms with garlic, oregano & basil added. This had a nice flavor. thank you

Easy and very tasty. I used chicken broth. It cooked all day on low while I was at work. Added the shells when I got home and heated some soft bread sticks. Dinner was on in no time!

The soup had a really good flavor. I added mushrooms and chopped broccoli to make it a little more filling. Not a big fan of kidney beans, but it worked here. Might put half a can next time instead of whole one.

My husband and kids loved it. I added chunks of ham and used chicken broth instead of veg. broth. Heads up to the people who complain about the mac becoming too mushy. The recipe states to add it last for 15 min.
