What You Need

lb. boneless skinless chicken thighs

2-1/2

cups fat-free reduced-sodium chicken broth

1-1/2

cups each chopped onions, celery and carrots

cups frozen peas, thawed

1/2

cup (1/2 of 8-oz. tub) PHILADELPHIA Chive & Onion Cream Cheese Spread

pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken

cup hot water

eggs, beaten

Make It

PLACE chicken in slow cooker. Add broth, onions, celery and carrots; cover with lid.

COOK on LOW 8 to 10 hours (or on HIGH 3-1/2 hours).

ADD peas and cream cheese spread; stir until cream cheese is melted and sauce is well blended. Mix stuffing mix, hot water and eggs until blended; drop in 2 heaping-tablespoon portions over chicken mixture. Cook, covered, on HIGH 30 min. Gently turn dumplings; cook, covered, 15 min.

This was pretty good... I expected a little more flavor. I would probably make this again with a couple adjustments. The stuffing dumplings can be tricky. After reading other reviews about the, I decided to take my time, do one spoonful at a time. I packed each spoonful into a tight ball and slowly dropped them in... also cooking them a little longer. They turned out good!!

I could not figure out the stuffing mix dumpling. made a big mess and did not work. I should of just left the soup alone! Next I'll do a simple dumpling with biscuit mix!!
