Love making these and eating them....so has everyone else I've made them for. Baked them quite a bit over the last couple years always a hit!!

I made my with limes and limejuice. It was delicious. I had to use my food processer to crush the vanilla wafers, they didn't crush easily. I also had to cook it a little longer, about 15 minutes. And the filling isn't quite as full as the picture. But all in all, it had a good flavor and was very different.

These were amazing!! I could not believe something low-fat would taste sooooo good! I will definitely be making these again. Maybe even next week. Its calling to me from the fridge... lol!

Came out more like lemon cheesecake. Also used graham crackers instead of nilla wafers. Will use more butter in the crust. Overall not bad but expected something different. Wanted more of a meringue type texture.

I actually made the "full fat" version, using regular nilla wafers and regular cream cheese, but I'm sure it's just as good with the reduced fat ingredients ;)

I added more lemon zest and lemon juice. I also used crushed graham crackers instead of Nilla wafers for the crust which I only baked for 7 minutes so it was softer. This recipe is so much easier than my other traditional recipe, and the Neufchatel cheese makes them sooo creamy!
