What an easy and delicious dessert for a family gathering! It takes no time at all and tastes just like boston creme pie! I used french vanilla cool whip instead of regular to give it more flavor!

I had this in a restaurant and then found this recipe. It is amazing!! I used light everything - lite cool whip, low fat graham crackers, no-fat-no-sugar vanilla pudding, 2% milk, and "whipped" frosting. But it still came out divine. (And it really is better the next day!)

Easy to make, delicious to eat! It is better to me the next day as the crackers soften a bit to mimick a real eclair texture. I have made twice with a request to make again from my husband.

This was so yummy! It really did taste like a filled pastry. I was a little nervous about the mushy graham cracker possibility, but it was perfect. I used cheescake pudding and it was great. My husband didn't care for the frosting, but that didn't stop him from enjoying it!

This was simple to make, and very good. I used regular pudding, but skim milk and light cool-whip. You could make this with any flavor pudding you wanted, and it would be great! Fresh berries would go really well with this too!

Not the greatest dessert ever, but I did like it, and I would make it again. It was still good the next day, even though the graham crackers softened a bit.

My family loves this recipe and I make it with reduced fat pudding and cool whip.
