The candy canes are cute, but they're really just for show. The serious peppermint flavor in this white chocolate cheesecake comes from extract.

What You Need

cups HONEY MAID Graham Cracker Crumbs

Tbsp. sugar

1/4

cup butter, melted

pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened

cup sugar

1/4

tsp. peppermint extract

cup BREAKSTONE'S or KNUDSEN Sour Cream

pkg. (4 oz.) BAKER'S White Chocolate, melted

eggs

cup thawed COOL WHIP Whipped Topping

miniature candy canes

Make It

HEAT oven to 325°F.

LINE 13x9-inch pan with foil, with ends of foil extending over sides. Mix graham crumbs, 3 Tbsp. sugar and butter; press onto bottom of pan. Bake 10 min.

BEAT cream cheese, 1 cup sugar and extract in large bowl with mixer until well blended. Add sour cream and chocolate; mix well. Add eggs, 1 at a time, mixing on low speed after each just until blended. Pour over crust.

BAKE 40 min. or until center is almost set. Cool. Refrigerate 4 hours. Use foil handles to lift cheesecake from pan before cutting to serve. Top each piece with a dollop of COOL WHIP and candy cane.

Made this last night as a test batch before I made it for a dessert contest at my company holiday party next week. It is delicious! I will double the peppermint extract - I don't taste it as strong as I expected/hoped. Joyce - IN

I used chocolate honey maid graham crackers instead and it worked out very well. I felt it needed a little more peppermint flavouring. Also, I found it needed quite a bit more than 40 mins. baking time. Everyone did remark how light it was. All in all, I felt it was a hit at a Christmas party. Gloria

I made this for a church Christmas party, a few didn't really care for the peppermint, but most really thought it was a nice change! I will deffinetly make it again! I added green food coloring to the cool whip.

I made this for a pot luck dinner, got rave reviews. It has been requested for our holiday dinner at church. I will have to make two as it goes fast and I want a piece too..LOL
