Anyone try this without cucumbers, sprinkle cheese on top and put under broiler? Sounds good, just not sure.

This was good and I used the Italian Dressing on mine, but for the rest of the family I used Ranch just sprinkled on. They loved it.

Very tasty, indeed! My vegetarian friend liked this. I made this a second time, except that I chopped everything up and added the dressing and my husband preferred that because he liked the bite sized pieces. I think the presentation on the original recipe is colorful and much more appetizing.

I used what was supposed to be a sweet onion, since we sometimes find the flavor of red onions to be overpowering. Turns out my "sweet" onion was too. Other than that, I like this recipe and presentation, even though chopping the ingredients and placing them in a bowl would make it easier to eat!

This was great! I used Monterrey Jack cheese once and that was also great. It's a great recipe for the summer months.

I have also made the same ingredients and added cucumbers, but chopped the ingredients. It still tastes yummy, but easier to serve a group.

I've served this dish on two occasions. It was hit both times. My guests were impressed.
