My kids usually hate green peppers and are a tough sell on vegetables but they loved this salad. It is definately a keeper.

Aside from taking the time to chop the veggies, the salad was fabulous! I left out the zucchini but substituted cucumbers in it's place. I also added black olives for the "greek" theme. I liked the fact it was a salad with no lettuce but still SO healthy. I definitely got my veggie requirements for the day. **I served this w/the Grilled Greek Chicken Kabobs and the meal was so good, my boyfriend is still talking about it a week later!

I brought this for a Memorial Day BBQ, and everyone loved it! I will definetely make it again. Since I couldn't find the italian cheese crumbles anywhere, I substituted sundried tomato and basil feta cheese. I would recommend making this the night before so it can marinate in the fridge. This recipe is Delish!!!

I make this salad every week and serve it as a side dish. I also use the fat-free Kraft Zesty Italian dressing. What a healthy dish!!
