I made this for Thanksgiving exactly by the recipe and had too much filling for one pie crust. I just put the extra filling in a custard dish and my husband ate it later. I recently made it again for a Christmas party but I doubled the recipe and made 3 pies. However, I mistakenly bought pumpkin PIE mix instead of pumpkin. I followed the same directions with the exception of only adding 1 1/2 cups of pumpkin (pie mix) and omitted the spices. It set up wonderfully and tasted just as good. It was a huge hit!
My Mom gives this 6 stars! Rich and delicious. Better the second day. Another great Cool Whip pie!
This recipe was so easy to make and it was delicious. My son was event able to help make it. Don't be afraid to add extra caramel it just made it better.

I made three of these pies for Thanksgiving desserts and received so many great compliments on them (even from people who said they weren't normally big "pumpkin" fans)as well as requests for the recipe! So simple to make, too!!
I made this recipee with high hopes. It was to much for me... to sweet- the flavor was overpowering. I think I would use half the amount of carmel on the bottom of the pie if I were to try it again.

Made this pie, looks just like picture,easy to make,everything goes together well. We prefer the traditional spices of cinnamon, ginger and cloves in a pumpkin pie, will use that next time instead of cinnamon and nutmeg listed in the recipe--another great recipe. Thanks!!
This was the absolute best pumpkin pie we've ever had! It was light, creamy and delicious.
yummiest, easiest pie ever! made this pie the night before thanksgiving...and it was a HUGE hit! better than normal pumpkin pie. i used sugar free/fat free jello pudding and fat free cool whip -- tasted just as good if not better! this is an all year recipe for sure.
