Layered Pumpkin Loaf recipe

Great recipe....very tasty. It seemed to make a lot of batter, so I made a half dozen muffins too with cream cheese mixture. I also baked it about 15 min. More.

It was yummy, a bit messy cutting yourself a piece afterwards.

Turns out perfect even at high altitude.

I made this recipe for a family gathering. It's didn't go over well. We like pumpkin but this recipe was really lacking in flavour plus we found it too heavy.

This recipe was amazing! A Collegue of mine brought it to work (nursing station) in form of muffins. They left as quick as they came. I did muffins as well and they turned out great! The cream cheeze is a great surprise when you bights into the moist muffin. I will be doing this recipe again and again!

I made this recipe to bring to work for "treat day" and it was very well received. I got a lot of compliments and requests for the recipe. Make sure you test the loaf in several spots before taking it out of the oven. I found that the toothpick was coming out clean in some spots, but completely covered in batter in other spots. It took about 1 hour and 20 minutes to cook in my oven.

These were a hit at Thanksgiving! The recipe yeilded 2 generous loaves as there was too much batter for 1 loaf. I have had to give this recipe out to several friends. It is delicious! I used ED Smith canned pumpkin as it is pre-spiced. Pumpkin spice is hard to find! Make your own by mixing 4 tsp cinnamon, 2 tsp ground ginger, 1 tsp allspice & 1 tsp nutmeg. Store in airtight container - makes 8 tsp.

I made this last year, with the cream cheese and made it this year w/o any. I added pecans and the idea of a cream cheese frosting would probably be better. I found the cream cheese to have an odd texture/taste once cooked in the middle. But overall a really yummy pumpkin loaf, nice and moist! would definitely reccomend.

I have made this for numerous events..always getting rave reviews. This has become our family favorite, and now replaces pumkin pie at Thanksgiving dinner.
