I made this recipe for a weeknight dinner (I left it in the crockpot on low for 6 hours while I was at work). I used the entire package of taco seasoning, and also added sliced black olives. This helped add some flavor to the vegetables, but I think cooking it in the slow cooker maybe made it a little weird. I thought it was too soft and less flavorful than I imagined it would be. However, I think that if I added some tortilla chip strips to it and maybe a sharper cheddar cheese that it would be very good. Maybe I just needed more texture in my dinner.
