This was very good as both dinner and leftovers. With skinless breast meat you definitely want to go with the shorter times, otherwise it tends to be a bit dry. Substituting boneless skinless thighs gives a bit more flavor and moisture for the meat if you don't mind darker meat. Very easy, will make again.

We used tortilla's and rolled up the tex mex along with rice and sour cream. It was very good. I did use the entire package of taco seasoning and it wasn't too spicy. The kids asked for more. Will make again and again.

I made this on a night I was going to be away during dinner hours... it was great to come home to a yummy meal after a stressful day.

My family loved this recipe. The next day, I placed the leftovers in a pie dish and poured prepared cornbread mix over it and baked as directed on cornbread package. Delicious!

Made this last night and husband loved it! I cooked it on high for a little less than 3 hours and that was too long, so next time it will shorten cooking time or prepare it in the skillet.

This smelt sooo good while it was cooking! And it tasted just as good as it smelt! It was so easy to make. And I loved how I didn't have to worry about dinner the rest of the day!

We absolutely loved this! I came home and supper was practically finished and it smelled so good. I used black beans instead of corn and it was good too. I will definitely make this again and again.
