This recipe was a hit with my husband. We like a little more heat than this recipe calls for, so I used hot taco seasoning mix and added crushe red pepper. I also replaced the corn with lightly seasoned frozen corn which includes red and green peppers and onions. I omitted the fresh peppers and used 1 1/2 cups of the frozen corn mix. Would definetly make again.

I just love easy cooking. Being a working wife and a mother of a toddler, I have to think quick but healthy. This is healthy, low fat, and filling. My family really liked it.

This was so easy and so good! I was amazed at how the chicken was so tender! My 7 and 4 year old loved it! It is a favorite in our family! My husband said, "This is great!"

Easy and delicious. My picky teenage boys ate it. With the leftovers I mixed 3/4 cup of enchilada sauce and rolled in tortillas with cheese.Delicious.

Soooo easy! Great recipe to double for bigger gatherings. Leftovers can be used on tortillas. Just add a little lettuce and some sour cream and cheese and you have a soft taco.

This was very simple to prepare and was very good over rice. I forgot to add the cheese! Next time, I will not add the bell pepper. They were very mushy.
