This was very easy to make and my family loved it. We have one picky eater who said it was to spicy. The more cheese on top, the better.

This disappeared in a flash. My husband was concerned about not having enough liquid in the crock pot so he added some water. Since it didn't reduce down after 5 hours, we used this "flavored" water to cook our rice in. Excellent flavored rice!

My whole family loved this dinner. I did add a can of black beans too!

this came out really good. We forgot to add the cheese to it but it was still great! I made a mistake and bought the salsa that had beans and corn and it still came out ok. I will make sure next time to read the label carefully! :)

I loved this super easy dish. I'm always looking for slow cooker recipes and this one was wonderful. I served it with rice and my husband loved it. It even tasted better the next day!

I made this recipe for a weeknight dinner (I left it in the crockpot on low for 6 hours while I was at work). I used the entire package of taco seasoning, and also added sliced black olives. This helped add some flavor to the vegetables, but I think cooking it in the slow cooker maybe made it a little weird. I thought it was too soft and less flavorful than I imagined it would be. However, I think that if I added some tortilla chip strips to it and maybe a sharper cheddar cheese that it would be very good. Maybe I just needed more texture in my dinner.

Super easy, cheap ingredients and a hit with the whole family. Also good in fajita wraps for a quick lunch.

This recipe was a hit with my husband. We like a little more heat than this recipe calls for, so I used hot taco seasoning mix and added crushe red pepper. I also replaced the corn with lightly seasoned frozen corn which includes red and green peppers and onions. I omitted the fresh peppers and used 1 1/2 cups of the frozen corn mix. Would definetly make again.
