Mediterranean Chicken

What You Need

cups instant brown rice, uncooked

small boneless skinless chicken breast halves (1 lb.)

small onion, chopped

tsp. dried oregano leaves

can (14-1/2 oz.) Italian-style diced tomatoes, drained

1/4

cup KRAFT Sun Dried Tomato Vinaigrette Dressing

tsp. minced garlic

1/4

cup sliced stuffed green olives

Make It

COOK rice as directed on package.

MEANWHILE, heat large nonstick skillet sprayed with cooking spray on medium heat. Add chicken, onions and oregano; cook 6 min. or until chicken is lightly browned on both sides and onions are crisp-tender, turning chicken after 3 min. Add tomatoes, dressing and garlic; stir gently. Cook 4 to 6 min. or until chicken is done (165ºF), turning chicken after 3 min. Stir in olives.

SPOON rice onto platter; top with chicken and sauce.

Very simple and easy to prepare. Lots of flavor. Tasted like a restaurant dish!

A great dish that my husband and I really enjoyed. I served it with white rice and steamed broccoli. Would be just as good with pasta or couscous.

Great dinner. I would definitely season the chicken next time I make this. The chicken was nice and tender and we loved the olives in this recipe.

This dish is delicious! I used fire roasted tomatoes and added some sliced white mushrooms. Next time I'll serve it with pasta.

This dish was awesome! I used Hunt's Fire Roasted Tomatos instead of italian diced tomatos I love the flavor of them. I also used red onion instead of white or yellow I think it added a more mediterranean flavor. I topped it with a bit of feta cheese. So good and easy I am totally adding this to my recipe box.

I made this last night and it was really good. I used white rice and served with dinner rolls. Only thing is that the amount of garlic was a little too much for my liking.
