Mediterranean Chicken

What You Need

cups instant brown rice, uncooked

small boneless skinless chicken breast halves (1 lb.)

small onion, chopped

tsp. dried oregano leaves

can (14-1/2 oz.) Italian-style diced tomatoes, drained

1/4

cup KRAFT Sun Dried Tomato Vinaigrette Dressing

tsp. minced garlic

1/4

cup sliced stuffed green olives

Make It

COOK rice as directed on package.

MEANWHILE, heat large nonstick skillet sprayed with cooking spray on medium heat. Add chicken, onions and oregano; cook 6 min. or until chicken is lightly browned on both sides and onions are crisp-tender, turning chicken after 3 min. Add tomatoes, dressing and garlic; stir gently. Cook 4 to 6 min. or until chicken is done (165ºF), turning chicken after 3 min. Stir in olives.

SPOON rice onto platter; top with chicken and sauce.

I've been experimenting with different recipes since my husband and I married just over a year ago. So far, this one has definitely topped the list. It is very flavorful and also pretty easy to make. I would highly recommend it and I plan to make it many times in the future!

My husband is a picky eater and he tends to indulge in more junk food than I'd like. This time I actually found something healthy that he enjoyed and he didn't pick it apart! Thank you.

Definitely will be making this one again! Was sooo fast and easy to pull together, worked great for a busy weeknight! I even added a bit to it, used a 1/2 c of the dressing and by dipping the chicken in an egg wash and then seasoned bread crumbs, browned it etc and it was still fast! Hubby has told me this is one I must make again!

One work Wow...My Husband loved it too. I have an electric stove so cooking the Chicken took a little longer. But this recipe is so easy. Will def try it again.

This recipe was okay. I agree that it was zesty but just didn't fit our tastes. If I were to make it again I would probably either salt or marinate the chicken in the dressing because the chicken itself was a bit bland.

One word, Kraft -- WoW! Another fantastic recipe that was super simple and so delicious! Great combination of flavors. The dressing adds such a nice kick to the sauce. I will definitely pass this one on to friends!

I loved this chicken. It has so much flavor and it is so easy to make. I will definately have this again real soon my whole family loved it.
