We loved this soup! Quick, easy and very filling. I used extra sharp cheddar cheese and added 1/2 the chopped green onions while simmering soup and milk mixture. Much easier than peeling potatoes and great for last minute.

This was recently featured in the Sept. 07-Food & Family Mag. Soup did not thicken till long after it had cooled. Bland. No flavor, although the fresh, green onion did do it some good. Added crushed pepper to taste. Ended up reheating and serving in a breadbowl. Survey says: THUMBS DOWN. You'd be better off making this completely from scratch.

We loved this recipe. I did change it just a bit. In a small amount of olive oil I sauted onion, celery, and garlic untill soft. Then added the milk, can of soup and hash browns. I also simmered it a little longer so it would thicken up more. I will be making this again.

I made this recipe tonight and it was delicious my daughter is not a soup lover and she went back for seconds- I served it with garlic breaksticks yum yum

I used "Southwest 'Simply Potatoe' Hashbrowns" and they added a little heat. It really spiced it up. When I made it, it was pretty thick, next time around I will add more milk. Great on a cool fall day.

Yummy! I made this tonight and found if I let it simmer a bit longer than 10 minutes, it definitely thickened up a bit. I added the onions, cheese and bacon into the soup during the simmering process. My husband, who isn't a cream soup guy, loved it!

I too added some garlic and onion, and I cooked the potatos a little before I added the soup and milk to make them softer. Delicious!

This is a hit at my house! Hubby went back for seconds, he never does that. I added 3 cups of hashbrown potatoes instead of 2. This tastes like something homemade from a restaurant but it's so easy! YUMMY!

My family loves potato soup. You made this so easy and time saving using hashbrowns. We loved it. I used cheddar cheese soup instead of cream of potato and added pepper and onions while it cooked. Turned out great! Will use it again and again! Thanks, Mary

Taste like you spent hours in the kitchen! Using hash browns is a genius way to avoid spending hours peeling and cutting potatoes. Love it!
