Luscious Tropical Dream Cake

What You Need

can (20 oz.) DOLE Crushed Pineapple in Juice, undrained

pkg. (2-layer size) yellow cake mix

pkg. (3.4 oz.) JELL-O Lemon Flavor Instant Pudding

1-1/2

cups cold milk

cups thawed COOL WHIP Whipped Topping

1/2

cup BAKER'S ANGEL FLAKE Coconut, toasted

1/2

cup chopped PLANTERS Pecans

Make It

HEAT oven to 350ºF.

DRAIN pineapple, reserving 1 cup juice. Prepare cake batter as directed on package, substituting reserved juice for 1 cup of the water. Pour into greased 15x10x1-inch pan.

BAKE 15 to 18 min. or until toothpick inserted in center comes out clean. Cool completely.

BEAT pudding mix and milk with whisk 2 min. Stir in pineapple. Spread over cake; cover with COOL WHIP. Top with coconut and nuts. Keep refrigerated.

My husband LOVES this cake. I never expected it to be as good as it was, I was a little concerned about the lemon pudding mix along with the pineapple, but it worked wonderfully together. I had a pineapple cake mix and used that. The smell was heavenly, like you were in the tropics. This will be a great cake to make during a snow storm this winter. At least the house will smell like the tropics. Thanks Millie for the great recipe.

Delicious! I made a lower sugar version with a reduced sugar cake mix, sugar free vanilla pudding with a tsp. of lemon extract, and sugar free cool whip. Everyone loved it. Can't wait to have an occasion to make it again.

I made this and it was wonderful the next time I made it I used a banana bread mix it was even better
