I've made a variation of this for years. I use often use the stuffing mix for pork and prepare it according to package directions in the microwave, then let it cool slightly and press it into the pan as a crust. I've used sausage, ham, bacon, spinach, swiss cheese, cheddar, mushrooms. salsa, o'brien potatoes, it's all good.

I loved this recipe but with a few changes for our family. Since we're not great mushroom fans I sauteed chopped sweet onion and green papers in the oil instead of the mushrooms. I also chopped chicken and added it to the onion-green pepper mixture. Followed the rest of the recipe except the only Stove Stove I had on hand was the Stove Top Cornbread Stuffing Mix. It worked great and tasted great. I sprinkled the green onions and added the tomatoes and cheese the last 15 minutes. My husband found it delicious. That's what you like to hear! Thanks for your great Food & Family Magazine. Love trying new recipes.
