We really enjoyed this soup! I kept adding water to it as it cooked, as there didn't seem to ever be enough. Thought it had just enough spice to it.

This soup is delicious! I used the whole can of black beans and beef broth. I topped each serving with a half slice of Kraft 2% swiss cheese instead of the cheese recommended. Excellent!

I read " deliab1's " suggestion of Roast-Beef , and the Serrano's , A Very Good recipe deliab1 . !Now mine, NewMexico Minestone -,I had grilled boneless-chicken-breasts( oh ,O K several pounds, kept in fridge for tomorrow lunch ) before I read this ,but the Grilled-Flavor with the chicken ,and I substituted can of mexican-stewed-tomatoes AND the best ingredient ,2 cans of Pinto-beans,drained , but "Your" favorites will surely make this 'Minestrone' recipe G R E A T !!!!!

For fewer calories, less sodium, and just as much flavor I substituted the following: ground turkey, organic canned black beans (no preservatives), low-fat and fat free cheese mixed, and salt-free southwest seasoning instead of dressing. Some fresh markets (Central or Whole Foods) sell no-sodium broth. I stock up when I see it!

This was so easy to make. My husband and I love it! We will be sure to make this time and time again. And it did double great too!

I used 4% fat ground beef & fat Free Kraft Zesty Italian dressing. I used 1/2 Kraft Mexican style shredded cheese & 1/2 Kraft Fat-freeMexican cheese blend. Delicious & Much less fat. Lynn8233

Way too many points (Weight Watcher) for me. It's 75% of my daily points. Would love to try it if it was lower in points

Delicious combination of flavors. Easy and fast. Used leftover roast beef and added chopped serrano peppers to my bowl to make it truly Tex-Mex!! Didn't have cheese, but it was still really good.

This was very good, quick & easy to make. I doubled the recipe for the size of my family and still have enough left overs for the next day. I added canned corn and topped with sour cream along with the cheese. I didn't have cumin so I used a little of chili powder.
