This recipe was inexpensive and easy to make. I've never made a whole chicken before, and my husband was so impressed. He wondered where I found the time to do it. I will definitely make this again.
GREAT TASTING!!!!! My kids can be picky eaters and they loved it. After chicken is done, I took the potatoes out and put in a separate bowl and added leftover cream cheese mixture to potatoes and that gave the potatoes a whole new taste. This will be a favorite for my family.
The chicken was such a hit that we decided that we would be using the cream cheese (we used reduced-fat) for our turkey at Thanksgiving to see how it works out. We may even try using the onion and chive spreadable cream cheese (reduced fat) to see how that works. We don't like rosemary so we used fresh thyme and parsley - fabulous!
The meat was so moist. I've already decided that this will be the main dish at all of my special dinners.
What a great recipe..It is so delicious. It can be prepared ahead of time and refigerated.
We just had this for dinner and it is excellent! The preparation is a little "gross", but well worth the effort.
As far as the taste goes it's very good. But when it comes to the preparation of the meal...not so good! The chicken was very hard for me to prepare, I had a hard time seperating the skin ( I eventually used a knife) and spreading the cheese. The potatoes dried out half way through cooking so I added a little water and more dressing. The chicken was very tender but had too much cream cheese on it, it kinda ruined it for me. Next time I will only use about half the cream cheese and add water to the potatos! The good thing was my husband actually liked it! Oh, and it turned out beautiful, I wanted to take a picture before we ate it! (I'm not a good chicken cooker)
I made this recipe today 9-8-2007 for dinner and found it to be very simple, but classy and what a wonderful flavor. Job well done. I certainly will be cooking this chicken and potatoes many times. The potatoes can be made with several different types of meats.
The verities of flavor were explosive in my mouth. It was rich and creamy with the right amount of rosemary. The chicken stayed nice a juicy even with out aluminum foil having to be added. The cream cheese mixture held in the juices quit nicely. My 8 year old and my 6 year old loved it. The are very picky eaters!
