What You Need

oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened

pkg. (10 oz.) frozen chopped spinach, thawed, well drained

cups KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese, divided

Tbsp. KRAFT Grated Parmesan Cheese, divided

small boneless skinless chicken breast halves (1-1/2 lb.), pounded to 1/4-inch thickness

RITZ Crackers, crushed (about 1/2 cup)

cups spaghetti sauce, heated

Make It

HEAT oven to 375ºF.

MIX cream cheese, spinach, 1 cup mozzarella and 3 Tbsp. Parmesan until blended; spread onto chicken. Starting at one short end of each breast, roll up chicken tightly. Secure with wooden toothpicks, if desired.

BEAT egg in shallow dish. Mix remaining Parmesan and cracker crumbs in separate shallow dish. Dip chicken in egg, then roll in crumb mixture to evenly coat. Place, seam sides down, in 13x9-inch baking dish sprayed with cooking spray.

BAKE 30 min. or until chicken is done (165ºF). Remove and discard toothpicks. Serve chicken topped with spaghetti sauce and remaining mozzarella.

My husband loved it! It perked up an otherwise dismal and rainy evening at home. My toddler even ate it! It is not a quick dinner though, only make it if you have some time on your hands.

It was really good. I think I just need to be a little better at pounding out chicken into a thiness, because after I cooked it I felt like I had tons of chicken and very little, very yummy, stuffing. But I will probably try again, it was really good!

The chicken bundles were a hit in our family, even with the spinach haters. The cheese helps to mask some of the spinach flavor. Will definitely make again!

This is SOOO yummy! My picky eaters ate it right up! Imade this for my mother-in-law one evening and she loved it and asked for the recipe! Make sure you plan for clean-up also! I made this ahead, covered it and put it in the fridge for 4 hours before baking. That gave me lots of time to clean-up the dishes. I have made this with many sides and it seems to go great with everything so far.
