Chicken-Parmesan Bundles

What You Need

oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened

pkg. (10 oz.) frozen chopped spinach, thawed, well drained

cups KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese, divided

Tbsp. KRAFT Grated Parmesan Cheese, divided

small boneless skinless chicken breast halves (1-1/2 lb.), pounded to 1/4-inch thickness

RITZ Crackers, crushed (about 1/2 cup)

cups spaghetti sauce, heated

Make It

HEAT oven to 375ºF.

MIX cream cheese, spinach, 1 cup mozzarella and 3 Tbsp. Parmesan until blended; spread onto chicken. Starting at one short end of each breast, roll up chicken tightly. Secure with wooden toothpicks, if desired.

BEAT egg in shallow dish. Mix remaining Parmesan and cracker crumbs in separate shallow dish. Dip chicken in egg, then roll in crumb mixture to evenly coat. Place, seam sides down, in 13x9-inch baking dish sprayed with cooking spray.

BAKE 30 min. or until chicken is done (165ºF). Remove and discard toothpicks. Serve chicken topped with spaghetti sauce and remaining mozzarella.

YUMMY!!!! Followed recipe except I only had chicken tenders but that worked out fine just not easy to roll but the toothpicks was a life saver. Maybe next time Iwill use light cream cheese to save on some calories. Served with sauteed green beans and rice with of course fresh italian bread.

I made this last night. It was a bit much for a Monday night as far as preparation. It was a little more diffucult rolling that chicken than it sounds. But it was worth every bit of work. My six year old frowned at the sight of the spinach but once she tasted it she was delighted. I always season any meat when I cook it so I had a little extra flavor to mine. I seasoned meat with my usual mix of salt, pepper and seasoned salt. And I added more cheese to cracker crumbs. I mean , really, can you ever have too much cheese!

I thought it had good flavor and texture. I felt as though it could use some more flavor such as parsley or basil or some other seasoning ( not sure what). Would surely make it again.

It was so good, all 4 of my young daughters wanted more, They were messy to make but when it comes to food, you cant judge a book by its cover. I would make these again for sure. They were easy to make and also instead of using frozen chopped spinach, i used spinach and herb dip mix from Tastefully Simple. mmm-good

Fantastic! I agree that this is very easy to make & any effort is well worth it. I followed the recipe exactly, adding just a touch of granulated garlic to the spinach/cheese mixture. Everybody at my house loved it. I served it with green beans & crescent rolls--yum!!

AWESOME! My kids and husband (and I) LOVED this! It's much easier to make than it sounds and looks very fancy!! I didn't have spinach, so I skipped it. I used neufchatel cheese instead of cream cheese. I was out of Ritz, so I crushed large whole grain pretzels instead. YUMMY!!

We made it without the spaghetti and sauce, as it tasted so good without it, and we thought the sauce would hide the creamy goodness you're about to eat. I am going to TN for a week to see family, and both want me to make it while we're there. Enjoy? You betcha! Scott
