This dish was incredible. I made this when we had our neighbors over for dinner a while back and they all asked me for the recipe. They are still talking about how great it was. I highly recommened it!

It is a great chicken recipe-moist chicken with excellent flavor. I have made it a few times now- once with the spinach and twice without: good either way.

I substitued Italian Bread crumbs with some Italian seasoning for the Ritz crackers to reduce the sodium. Also, used fresh spinach to enable me to make the rolls easier. Yummy with brown rice !!

I loved this meal. It was a little hard getting the chicken flat, but it was worth it. The flavor is GREAT and it looks so nice! I will definitely make it again.

I used broccoli instead of spinach, as my husband doesn't like it & it was good. Really messy to make, tho I think this was because I didn't buy the right chicken breasts, I bought the thin kind. I didn't know that meant smaller, it had a great flavor tho. I seasoned the cracker crumbs before rolling the chicken & since I had some of the "stuffing" left over I rolled it into small balls as best I could & rolled it in the cracker crumbs & cooked it with the chicken, they were good also. Will make this again.

YUMMY!!!! Followed recipe except I only had chicken tenders but that worked out fine just not easy to roll but the toothpicks was a life saver. Maybe next time Iwill use light cream cheese to save on some calories. Served with sauteed green beans and rice with of course fresh italian bread.
