I made this the other night for dinner and it wasn't what I was hoping for. Had a little trouble getting the eggs to set , then it ended up burning at the edges. It was good, though I'll use more seasoning next time. I will try this again.

Made this for dinner last night. The family loved it. My husband cut the bacon into pieces & cooked them in a cast iron skillet on the grill while I prepared the veggies. When it came time to saute them, we just put butter in the bottom of a skillet. Seasoned everything with salt & pepper and Montreal Steak seasoning. Instead of putting the bacon on top, we mixed it in with the potato mixture. Will make this again, next time I think we'll use sausage and maybe have it for breakfast. It's just fun having breakfast at dinner:o)

I made this recipe this morning for my family and they LOVED it. It was so simple to make and tasted fantastic. I would definitely try variations with the recipe - top it with sour cream, salsa, cilantro, use other veggies. It has so much versatility!

As written this recipe was disappointingly bland and soggy. I advise seasoning the vegetables and then the tops of the eggs after you drop them in. Also, I really think it would be better if the veggies were sauteed in a little oil. Even with the Pam it stuck to the pan and burned a little and oil would help things crisp up so it wouldn't be as soggy. I made this with ham instead of bacon and with the few changes I made it was a hit! We ate it with ketchip like hash browns. :)

I was really excited about this recipe, but it ended up not having much flavor at all. My fiance didnt even eat what was on his plate. Would most definatly not make again.

Will make again. I also didn't have tomatoes to used and also it seem to take a little longer to cook, but very much worth the wait.

My family liked this dish but the potatoes needed some seasoning. I think next time I will also add extra veggies.

My husband and I both loved this recipe. I did not have tomato, so I left that out this time. I also used vidalia onion instead of the green onions. The whole recipe came together great, but I did have to cook it a bit longer at the end to get the eggs to set up. Will definitley be making this again!

I made this recipe today.This recipe was very easy to make and it was a big hit with all my kids(4). I wasnt sure about the eggs but it turned out really good. I used 4 potatoes, a whole pepper , extra tomatoes and green oninons because of my big family. I cant wait to make it again! I added some buttered french bread and honeydew melon to set the meal.

I made this recipe the day I got my food and family magazine and my whole family loved it. I'm definetly making it again.
